"But the princess never got to taste that brambleberry. Instead, she fell fast asleep." -- Strawberry Shortcake recounts how Princess Strawberry Rose got pricked by a brambleberry bush and got knocked unconscious as a result.
Princess Strawberry Rose is a version of Strawberry Shortcake greatly exaggerated for use in the "Sleeping Beauty" episode in Happily Ever After. Her role is similar to Sleeping Beauty. She fell into a deep sleep by a prick from one of the Brambleberry Fairy's bushes as an effect from the curse that she got from the Brambleberry Fairy (who originally wanted her to disappear though one of the nicer fairies prevented that) and later brought out of the spell by Brambleberry herself along with other fairies.

Princess Strawberry Rose has maroon hair that goes down to her bust. Her hair flares out from a point close to her ears (which are obscured) and below that. Her outfit consists of a pink crown that has a strawberry pictured on it and a pink dress with sleeves that reach her wrists and have lime green linings and a lighter pink skirt. The scene where she falls unconscious from the brambleberry bush scratching her shows that she has pink tights or long socks (though she does not have other footwear); her legs are otherwise hidden.
Princess Strawberry Rose has a personality similar to Strawberry Shortcake herself. She is kind, patient, and a forgiving girl, shown by how she invited the Brambleberry Fairy to a party despite the latter cursing her. She is also a wise ruler who listens well. Princess Strawberry Rose got these personality traits from the gifts that she received from the fairies in her infancy.

Princess Strawberry Rose makes her debut during the first few minutes of Sleeping Beauty. Here, she is adored by the fairies, who sing a song about how pretty she is. The fairies give her gifts via their magic, but the Brambleberry Fairy appears, angry that she did not get invited (even though the page who resembled Banana Candy tried to deliver it). Feeling petty even though the fairies had repeatedly assured that she should be satisfied due to being present, the Brambleberry Fairy uses her magic to condemn Princess Strawberry Rose to death in the form of erasure from existence via pricking herself on a brambleberry bush, but one of the fairies who was there (and is apparently based on Apple Dumplin') mitigates the curse to merely being put to sleep with her own magic once she figures out which gift she should give. As a result, the kingdom receives the command to burn down all brambleberry bushes. Princess Strawberry Rose thus manages to live to the age of 16; by this time, she grew into the princess that she was meant to be: a kind, patient, wise, and forgiving ruler who is a good listener.
Unfortunately, the defensive measures that the kingdom placed so Princess Strawberry Rose wouldn't die via brambleberry bush would be pointless as the Brambleberry Fairy returned to make more of them to make sure she would get vengeance. Princess Strawberry Rose ended up seeing them, thinking that a brambleberry would be nice, so she went up to one to get some, and got scratched by the brambleberry bush that she was pricking from. The princess was knocked out cold before she could eat any of the brambleberries that she plucked due to the curse. The fairies found and recovered her body and tucked her into bed by their magic. They then knocked out the kingdom's commoners to prevent them from finding out what happened. Princess Strawberry Rose would later be revived when Prince Huckleberry came by to teach the Brambleberry Fairy a lesson on listening, giving the Brambleberry Fairy to undo the curse and the damage wrought on by her. Not long after she awakens, the princess later intercepts the departing Brambleberry Fairy (who at this point became a good listener and never shut out apologies) and allows her to come to the party. Her relationship with the redeemed Brambleberry Fairy developed into true friendship.
